Gluten Free Cauliflower Gnocchi

I came up with this recipe after seeing loads of gnocchi recipes but not being able to find a premade gnocchi that didn't contain thickeners, preservatives and vegetable oils. The fact that it turned out so well was a complete fluke because I had no idea what I was doing!!



Ingredients

Half a head of cauliflower

¾ cup lentil flour

¾ cup buckwheat flour

2 TB nutritional yeast

Himalayan salt and pepper


Method

Steam the cauliflower and let it cool slightly. Blend until smooth and add the rest of the ingredients and combine until it forms a sticky dough type consistency. Adjust the flour if needed to get the right consistency.

Take small amounts of the dough and roll into a gnocchi shape, placing them onto a tray or plate lined with baking paper. Leave in the fridge for a couple of hours to allow them to firm up.

When you’re ready to eat them, cook in boiling water until they start to float and remove with a slotted spoon. Stir through your favourite sauce while they’re hot.
