Of all the ‘healthy’ desserts that I’ve made or tried (and let me tell you there’s been plenty so I’m quite the expert), this would have to be one of the best! Hubby constantly has his head in the fridge stealing bites every time I make it lol!
It’s the perfect balance of healthy and chocolatey, and not too much coconut oil. Don’t get me wrong I looove coconut oil, but sometimes healthy desserts have so much coconut oil they all end up tasting similar.
No Bake Nut and Chocolate Slice
330g raw unsalted nuts. You can use any that you like, I normally use a mixture of cashews, walnuts, macadamias and hazelnuts.
2/3 cup rolled oats
1/3 pumpkin seeds, plus extra to sprinkle on the top
1/4 cup goji berries, plus extra to sprinkle on the top
225g medjool dates, pitted
1/3 cup almond butter. Peanut butter works fine if that’s all you have on hand.
1/4 cup coconut oil
1 heaped TB raw cacao powder
1 TB chia seeds
200g 70% or higher dark chocolate, broken into pieces
Line a baking tray with baking paper.
In a food processor, combine the nuts, oats, pumpkin seeds and goji berries and process for approx. 15 seconds until it resembles a chunky crumb. Add the dates, almond butter, 2TB of the coconut oil, raw cacao and chia seeds. Pulse until everything is mixed together.
Transfer to your baking tray, press it down firmly then chill it in the fridge for 20 minutes.
Melt the chocolate with the remaining coconut oil and pour over the base once it’s been chilled. Sprinkle over the extra pumpkin seeds and goji berries and put it back in the fridge until the chocolate is set.
Once it’s ready, cut into squares.
